This is one of my favorite and most frequently used breakfast recipes! It is so easy and made with pure and simple ingredients.
I substitute any oils or sugar for the bananas (applesauce works great too!). It’s also a great way to use overripe bananas. We make these pancakes weekly!

Banana Pancakes
Ingredients:
Serves 5
- 2 cups flour
- 3 t. baking powder
- 1 t. salt
- 2 or 3 bananas, mashed (3 is better 🙂 )
- 2 eggs
- approximately 2 cups milk, depending on how thick you like the batter. I like it a little on the thin side.
- 2 t. vanilla
Directions:
Turn on Jack Johnson’s song, “Banana Pancakes.” Sing loudly while you whisk together dry ingredients. Add vanilla and eggs to the mashed banana. Pour into dry ingredients and stir in milk until desired consistency is reached. Heat up your griddle on med. heat. Melt a little butter then pour batter on hot griddle. Serve with warmed pure maple syrup. Enjoy!!
