Bbq Chicken Quesadillas

Bbq Chicken Quesadillas

It is a wonderful feeling to begin the day knowing dinner is planned and not much prep will lead me to a flavorful, healthy meal that my whole family will love.  That is my intent when I plan my Mini-Weekly Menus…two meals that piggy-back off each other, making your efforts for the first meal contribute to an additional dinner the following night.

Tonight’s Bbq Chicken Quesadillas are made with the leftover chicken from last night’s Slow Cooker Shredded Bbq Chicken Sandwiches. Both meals are simple yet delicious!

Whoever invented Bbq Chicken Pizza was brilliant!  Fresh mozzarella, chunks of bbq saucy chicken, and sauteed onions baked onto America’s favorite pie….pizza!  This is my shortcut take on those amazing flavors, subbing yellow onions for the traditional red.  With the chicken already waiting for you, the prep is easy…thin slice an onion and some mozzarella and you’re on your way! Hope you love it as much as we did!  Simple, fast and downright gourmet!

Bbq Chicken Quesadillas

Ingredients:

Serves 4-5

  • leftover shredded chicken from last night’s Slow Cooker Shredded Bbq Chicken Sandwiches (About 2 1/2 cups)
  • 1 yellow onion, thinly sliced
  • 1 T olive oil
  • 3/4 lb. fresh mozzarella
  • 5 tortillas (I like the simple ingredients in Tortillas Fresca)

Directions:

  • Pre-cook tortillas in a large skillet over med-high heat, about 20 seconds per side, if using uncooked tortillas.  Otherwise, skip this step.
  • Using the same skillet, heat olive oil over med. heat and add sliced onions.  Cook for about 3 min. or until translucent.  Set aside.
  • Meanwhile, heat the chicken in a med. saucepan over med. heat until heated through, about 3-5 min.
  • Carefully slice the fresh mozzarella (about 1/4 inch or thinner.)
  • Place a tortilla in the large skillet, over med. low heat.  Place about 5 slices of the mozzarella in one layer on top of the tortilla.
  •  Add about 1/2 cup of the shredded chicken and spread evenly.
  • Scatter several onion slices on top and cook until cheese is melted.  Be careful not to let tortilla burn.
  • Slice and serve hot!
