Carrots! These crunchy, sweet favorites give us many reasons to love them.
They have been found to slow the aging of our cells, promote healthy skin and reduce the risk of several types of cancer, just to name a few of their benefits.
Researchers have found Falcarinol and Falcarindiol in carrots, which they feel cause the anticancer properties. (Source: Care2care.com)
We eat carrots almost every day in our lunches or in our daily fruit and veggie shakes. But, it seems we haven’t had many for dinner lately, so I found these delicious fritters, which showcase carrots and broccoli, another vegetable we needed to get into our lineup.
We served these yummy, crunchy Broccoli Carrot Fritters with a side salad and some rustic french bread. Recipe modified from allrecipes.com.

Ingredients:
- 2 small crowns broccoli (about 2 cups diced) **
- 3 carrots (about 1 cup diced)
- 1/2 cup flour
- 1/3 cup Parmesan cheese, grated **
- 1/2 teaspoon salt **
- 1/8 teaspoon fresh ground black pepper **
- 2 green onions, thinly sliced
- 2 large eggs **
- 2 T olive oil **
Chipotle Sour Cream
- 1 cup plain greek yogurt or sour cream (Fage greek yogurt is my new favorite-thanks Will!) **
- 1 t. chipotle pepper (or cayenne pepper would be good too)

Directions:
- Fill a large microwavable bowl with about 1/2″ water. Steam carrots and broccoli for 3 min. Let cool for a few minutes then thinly dice. Empty the bowl of it’s water and return diced veggies back into bowl.
- Add flour and stir to coat.
- Add Parmesan, salt, pepper, onion and eggs. Mix well.
- Heat about 1 T olive oil in a large nonstick skillet.
- Using a measuring cup or large serving spoon, scoop about 1/4 cup of broccoli mixture into the hot oil. Use the back of the scoop to flatten into a patty. Cook for a few minutes on each side or until golden brown.
- Add the chipotle pepper to sour cream and mix well.
- Serve fritters with a dallop of chipotle sauce on top.
