This is the CaprEASIEST dinner ever! 🙂
It’s french bread pizza, Caprese style.
I was craving pizza and Caprese salad, so decided to combine them into… Caprese Pizza!
I modified this recipe slightly from the wonderful blog of Two Peas and Their Pod.
If you would like a gluten-free version, try Udi’s GF crust.

Ingredients:
Serves 4
- 1 loaf Ciabatta bread **
- 4 T unsalted butter, melted **
- 1 clove garlic, minced **
- 2 tomatoes, sliced thin **
- 12 oz fresh mozzarella, sliced thin
- 1/3 cup fresh basil, sliced thin (I used about 15 basil leaves) **
- salt and pepper to taste **
- 1/3 cup balsamic vinegar **

Directions:
- Preheat oven to 400 F.
- Carefully slice Ciabatta loaf in half, lengthwise.
- Mix butter and garlic together and spread evenly across both pieces of bread.
- Place mozzarella slices evenly on bread and bake for 10-12 min. or until cheese is melted.
- Meanwhile, reduce vinegar by bringing it to a boil over med. heat, in a small saucepan. Turn to low and let simmer for 7-10 min. or until reduced by about half.
- Top pizza with tomato slices, basil, salt and pepper. Drizzle with balsamic.
- Cut into slices and serve warm.
