Every time we go to a deli for lunch my kids beg for a meatball sub. So, I thought, why not make them for dinner?! It’s a super easy dinner that makes great leftovers as well!

Ingredients:
Serves 8
- 2 lbs ground beef
- 1 small onion, diced
- 2 eggs
- 1 1/2 t. sea salt
- 1/2 t. pepper
- 4 slices bread
- 24 oz marinara or spaghetti sauce
- 8 hoagie rolls or hot dog buns
- 2 cups shredded mozzarella
Directions:
- Preheat oven to 400 F.
- Place bread in food processor and blend into breadcrumbs. Add salt and pepper and blend to mix.
- Place ground beef, eggs, onion and breadcrumbs into a large bowl and mix well. (Easiest way is to use your hands -get messy!)
- Form into desired size meatballs, about 1-2 T and place on a parchment lined cookie sheet. Bake for 10-15 min. (Our meatballs were on the bigger size, so we cooked for 15 min. Make sure to cut open and check the center for doneness.)
- Place cooked meatballs and marinara in a large saucepan and warm over med. heat.
- Assemble sandwiches on a cookie sheet by placing meatballs on hoagies, add a little extra marinara and sprinkle cheese over the top. Place back in oven for a few minutes or until cheese is melted and bun is lightly toasted. Enjoy!!
