Enjoy a Christmas toast with this festive mojito!

Ingredients:
Makes one cocktail

• 1/2 lime, cut into small wedges
• 5 or 6 mint leaves
• 2 oz good quality white rum
• 2 or 3 T cranberry simple syrup (adjust to your liking)
• sparkling water
• ice

Directions:

• Pour a little of the rum in the bottom of a high ball glass with the mint and lime.  Muddle the mint and lime to release the juice of the lime and the oils in the mint.  (just a little is all you need, don’t tear the mint up too much)
• Fill the glass with ice.
• Add the rest of the rum and the simple syrup.
• Top with sparkling water and stir.
• Garnish with a mint leaf and a couple of the cranberries from the simple syrup.  So pretty!
