Pulled Pork Sandy with Bbq and Homemade Slaw

I have fallen in love with homemade cole slaw!  And the texture combination of cool slaw alongside tangy Bbq sauce and hot pulled pork in this sandwich is divine.

This sandwich is super easy and better yet will provide most of what’s needed for tomorrow night’s Pork Tacos.  Pork cooked slow in the crock pot with beer creates a tender, juicy base for this scrumptious sandwich.  Topped with homemade cole slaw and bbq sauce, it’s the perfect summer dinner!

Pulled Pork Sandy with Bbq and Homemade Slaw

Ingredients:
Serves 6 (plus dinner tomorrow night, see Mini-Weekly Menu for details)

  • 3 lb. pork roast
  • 16 oz beer (I used a lager, but any beer will be good!)
  • 1 t. sea salt
  • 1/2 t. black pepper
  • 8 oz of your favorite bbq sauce (I used Weber Original because I was out of my favorite, Sticky Paw that my wonderful neighbors make)
  • 1 recipe homemade cole slaw
  • 6 hamburger buns

Note:  These ingredients are part of this week’s Mini-Weekly Menu and enough for tomorrow night’s Pork Tacos with Avocado Cream Sauce.  (If you are only making this dinner and don’t want leftovers, use half the pork, beer and cole slaw.)

Directions:

  • Pour beer into a slow cooker.
  • Add pork into beer and sprinkle salt and pepper on top.
  • Cover and let cook on low for 6-8 hours or high for 4 hours. (crockpots may vary)
  • When pork is finished cooking, shred using two forks. (Or place in a mixer with a paddle attachment and mix on low for just a few seconds, being careful not to over-mix or meat will turn too mushy.  You don’t want to lose the nice shredded texture, but it is a great shortcut if not overdone.) 🙂  Return shredded pork to juices in the crockpot.
  • While meat is cooking, make coleslaw.
  • To serve, place shredded pork onto a bun.  Drizzle bbq sauce over meat and top with coleslaw.
  • Enjoy with an IPA! 🙂
