Feel like lasagna but don’t have time to assemble all the layers? Try my Shortcut Lasagna. It has all the goodness of lasagna and couldn’t be easier!
I kept this recipe very simple but you could easily add in some extras, such as vegetables, fresh parsley or Italian seasonings. But, when short on time, keep it simple. This is delicious as is!

Ingredients:
Makes 6 servings
- 1 lb. ground beef
- 25 oz spaghetti sauce
- 1 1/2 cups cottage cheese
- 2 cups mozzarella cheese, divided
- 1 egg, lightly beated
- 1 lb. any noodles (I used spirals)
- 1/2 t. sea salt
Suggested Sides
Directions:
- Butter sides of a casserole dish or oven safe bowl. Set aside.
- Brown ground beef in a large saucepan. Drain and let cool.
- Add in cottage cheese, egg and 1 cup mozzarella.
- While beef is cooking, add salt to water in a large pan and bring to a boil. Cook noodles until just tender. Drain and add to beef mixture. Add sauce and pour into buttered bowl. cover top with rest of mozzarella. Bake at 400 F for 20-30 or until juices are bubbling and cheese is golden brown. Serve with bread and a salad, if desired.
