The avocados make this meal, so be sure not to skimp! 🙂 Set up a make-your-own-taco-bar and the kids will love it even more.
And of course the perfect side with any Mexican dish is spanish rice. My homemade Spanish Rice is a simple and healthy version that is worth the little bit of extra effort. However, if you’re in a hurry, try Knorr Fiesta Sides but skip the oil (you won’t even notice.)

Ingredients:
Serves 5-6
- 8 Tortillas Fresca
- 1 can pinto beans, drained
- 1 can black beans, drained
- homemade taco seasoning
- 1/4 cup of water
- 1/2 head lettuce, chopped
- 2 ripe avocados
- 1 cup frozen corn
- 1 cup cheddar cheese, shredded
- 1 tomato
- hot sauce (optional)
- Spanish rice for side
Directions:
- Heat beans and corn in a saucepan until hot. Add 1/4 cup of water and taco seasoning and let simmer a few minutes. You may need to add more water if sauce seems too thick.
- Meanwhile, if using the uncooked Tortillas Fresca, cook your tortillas.
- To serve, hold tortilla like a taco and layer with beans and corn, lettuce, avocados, cheese and tomatoes. Top with hot sauce if desired. Serve with spanish rice or a side salad. Enjoy!
