Pie for dinner? Yes, please! Adding eggs into our dinner lineup is a great way to keep it balanced and interesting. And scrumptious!
This is an easy recipe that I modified from dineanddish.net

Ingredients:
5 cups fresh spinach (about 8 oz.)
4 eggs
1 cup milk
1 1/2 cups half and half or cream
3/4 t. salt
1/2 t. pepper
1/2 cup fresh grated Parmesan cheese
2 cups shredded cheddar cheese
1 pie crust for a deep dish 9″ pie plate (click here for best ever pie crust recipe)
Directions:
- Preheat oven to 350 F.
- Using foil, make a ring the size of outer edge of pie plate. (see picture below)
- In a large bowl, whisk eggs, milk, cream, salt and pepper.
- Add spinach and cheese and mix well.
- Pour into crust and push spinach down with a fork to let some of the egg mixture rise to the top a little. Sometimes I do this several times in the first 10 minutes of baking to keep the spinach from getting dried out too fast. A little crust on top is inevitable though.
- Bake for 60-75 minutes. After about 20 min. (or when crust is light golden brown,) place foil ring around crust to keep from burning. When done, center may be a tiny bit wobbly but it will set up as it cools.
- Let cool for 10 minutes before serving.
