Another versatile meal…feel free to add any veggies you choose.
I love this combo of peppers and onions with the black beans. Or if you’re craving meat, add steak or chicken.
This is a great meal to have when the peppers are on sale 10 for $10. Buy 6 peppers in assorted orange, yellow and red colors and make Roasted Red Pepper soup for dinner another night. Save a grocery trip and money!

Ingredients:
8 flour tortillas (we use Tortillas Fresca,
uncooked tortillas with few ingredients –
they taste like homemade!)
1 red pepper, sliced
1 yellow pepper, sliced
1 small onion, chopped
olive oil
1 can black beans (15 oz), undrained
1 can pinto beans (15 oz), undrained
1 recipe homemade taco seasoning
2 cups shredded cheddar cheese
2 avocados, sliced
1 recipe homemade spanish rice or 1 package Knorr fiesta sides spanish rice
Cholula hot sauce (optional)
Directions:
- If using uncooked tortillas, cook following package directions.
- Make the spanish rice.
- Meanwhile heat olive oil in a med. saucepan and saute onions and peppers until onions are translucent and peppers begin to soften.
- Heat beans in a small saucepan and add taco seasoning. Let simmer for about 5 min.
- Put cheese and sliced avocados in small serving bowls for self service.
- Build your fajitas by layering rice, beans, pepper mixture, cheese and avocados. Top with hot sauce. Serve with extra spanish rice or a side salad. Enjoy!!
