My goal for the weekly menus is to have balance. Balancing how much and the types of meats, grains, legumes, vegetables, etc. will allow us to benefit from many different nutrients, while not over-doing any ingredients. In addition, I decided that doubling up on a couple of main vegetables and ingredients each week will help my followers make fewer trips to the grocery store. While you’re making your shopping list, look for the asterisks next to certain ingredients, informing you that the starred item is used in another recipe this week, helping with your planning.
