This is a super quick and easy sauce that can be used on pizzas or pastas of any kind. It was inspired by the abundance of beautiful and super tasty tomatoes we have in our garden this year.
I was making zucchini pizza bites for dinner and wishing I had planned ahead to try and make my own pizza sauce.
I decided to take a shortcut and see how it turned out! I added homemade pesto to cooked tomatoes, giving it the typical basil and parmesan flavors of a desired pizza sauce.
I loved it so much that I’m sharing it with you!! I’m estimating the amounts since that night I made it on the fly. This should get you close enough and you can’t really go wrong.
Pour yourself a glass of red wine and enjoy!
Happy cooking!! ~ Gena
Ingredients:
- 3 or 4 tomatoes, diced
- 1 t. olive oil
- homemade pesto or store bought
Directions:
- Bring 1 t. olive oil to heat over med. heat. Add tomatoes and let simmer for 3-4 minutes, occasionally mashing them down with a spoon and stirring.
- As the water from the tomatoes evaporates the sauce will thicken. Add pesto and cook for 2 more minutes.
So easy! Enjoy!
