I love finding recipes like this! There are so many great things about this Slow Cooker Quinoa Enchilada bake…
- It’s dee-licious!
- It’s easy! Yay…crockpots!
- It’s healthy
- It’s gluten-free
- It’s mostly Paleo (you could easily leave out the black beans and corn)
- And….it’s meatless (could be vegetarian if you used veg. broth instead of chicken broth)
But, truly the best part is having a warm, melty, good ingredient meal that is so yummy! I’m trying to add more crock-pot meals for those who need quick weeknight dinners. If you don’t have time in the morning to prep your veggies, try chopping them the night before. Then you can simply dump most of the ingredients in the pot and carry on with your day.

Look for the double asterisks (**) when planning your grocery list. These items will be used in 2 or more meals from This Week’s Menu. Hopefully this will save you a grocery trip! 🙂

Ingredients:
Serves 6
- 1 small onion, chopped
- 1 yellow pepper, chopped
- 1 red pepper, chopped
- 1 1/2 cups dry quinoa
- 2 1/2 cups chicken broth **
- 1 15 oz can diced tomatoes, undrained
- 1 4 oz can diced green chiles, undrained
- 10 oz Classico Pasta Sauce (or your favorite spaghetti sauce) **
- 2 T chili powder
- 1 t. salt **
- 1 cup frozen corn **
- 1 15 oz can black beans
- 1 1/2 cups shredded cheddar cheese **
Toppings:
Directions:
- Add all ingredients except corn, black beans and cheese into a crock pot. Mix well
- Cook on low for 6-8 hours or on high for 3-4 hours (crockpots vary, so adjust accordingly -mine is old and slow!)
- About 30 min. before serving time, add corn and black beans and mix well. Cover with cheese and return lid. Cook for another 30 min. or until cheese is melted and corn is warmed through.
- Top with lettuce, tomatoes, avocados and whatever other toppings you like on your enchiladas.
