Here’s another great way to serve up “tacos!” It was a nice change to have them wrapped in lettuce, saving us some carbohydrate calories but not compromising the crunch.
With tacos, anything goes. Add your favorite meat, fish or beans, rice and veggies with some taco seasoning, cheese and avocados then serve it in a shell or wrapped in lettuce….and you have yourself a taco.
For tonight’s lettuce wraps, I used our standard meatless bean mixture of pintos and black beans, homemade taco seasoning, sauteed onions, corn and cheese. As a special addition I made an avocado ranch sauce to top them with. It was delish!

Ingredients:
Serves 6
- 1 head iceberg lettuce
- 1 onion, chopped
- 1- 15 oz can pinto beans
- 1- 15 oz can black beans
- 1 cup frozen corn
- 1 recipe homemade taco seasoning
- 1 cup shredded cheddar cheese
- 1 tomato, chopped
- 2 T cilantro, chopped
Avocado Ranch Sauce
- 1/2 ripe avocado, mashed
- 2 T homemade ranch dressing
Directions:
- Heat olive oil in a med. saucepan and saute onions until translucent, about 3 min.
- Add beans, corn and taco seasoning. Stir and let heat through, about 5 min. Add a little water if too thick.
- For Avocado Ranch Sauce, mix together the avocado and ranch until smooth. Feel free to add more or less ranch depending on desired consistency.
- Peel a large leaf of lettuce off the head and place on a plate.
- Fill with bean mixture and top with cheese, cilantro, tomato and a spoonful of avocado ranch sauce.
- Wrap and eat like a taco!
