This creation came one night when it was getting late. The refrigerator and pantry were looking bare and I was feeling too tired to even think of what to cook for dinner.
I found a can of albacore tuna and decided we could have tuna melts. We switched our regular french bread for tortillas and a fast, easy dinner was born.
I figured the meal would be good enough for that night, since our options were slim, but I wasn’t expecting any rave reviews from my family. So, I was pleasantly surprised by the positive comments they were giving. We all really loved them! Who knew? Tuna Melt Quesadillas!

- 1- 12 oz can Albacore tuna, drained
- 2 T mayonnaise
- 2 T pickle relish
- 1 t. dried dill
- 2 cups shredded cheddar **
- 6 flour tortillas (we like Tortillas Fresca-found in refrigerator section of the store)
Directions:
- Preheat oven to 350 F. If using uncooked tortillas, cook and place onto a large cookie sheet. (Depending on size of your sheet, it may take two. We have an extra large one, so we can cook them all at once.)
- Mix together first four ingredients in a med. sized bowl. Spread onto one half of each of the tortillas.
- Sprinkle the cheddar on to the other half of tortillas.
- Bake for 10 min. or until cheese is melty.
- Fold cheese half on top of tuna half and cut into wedges. Serve warm.
