If yes, you are lucky like us! Thanks to their generosity, we have had the best fall of making wonderful apple recipes, from homemade cider and cocktails to apple crumble and the apple pie that I’ll make for Thanksgiving, to name a few.
Today I want to share a wonderful and fun breakfast idea with you….Apple Rings.
This was one of the first things we made after our plentiful harvest of our friend’s tree. (Thank you Chris and Nicki, love you guys!!)
And just when our apple stash was running low, another kind neighbor brought me two more bags of apples! Thank you Doug! Have I ever mentioned that we live in the best neighborhood ever? So lucky!!
“It’s pancake meets apple pie!” said my oldest son.
And he’s right! Warm apple and cinnamon baked in a pancake batter. Pure fall goodness! And they were so easy. We even pulled it off on a school morning! Happy Cooking! ~ Gena
Serves 5 to 6
4 apples, peeled and cored (I used a melon baller, so easy!)
2 cups flour
3 t. baking powder
1 t. salt
1/2 t. nutmeg
2 eggs
2 cups milk (approximately)
1 t. vanilla
1 T butter for griddle
butter and pure maple syrup for serving
Directions:
- Carefully slice peeled and cored apples, about 1/2″ thick. Set aside.
- Mix dry ingredients in a large bowl.
- In a separate bowl, whisk eggs, vanilla and about 1 cup of milk.
- Make a well in middle of dry ingredients and pour this mixture into the well. Stir until combined. Add up to 1 more cup of milk to reach desired thickness. Don’t let batter get too thin or it won’t stick to the apples.
- Heat a large pan or pancake griddle over med. heat. Melt a dab of butter and spread evenly on pan to keep rings from sticking.
- Using a fork, drag apple rings through batter and place in heated pan or griddle.
- Cook as you would regular pancakes, flipping after edges become dry, about 1 or 2 min. per side.
- Serve with butter and pure maple syrup.
