Turkey, rice and cranberries go together perfectly in this day after Thanksgiving recovery meal.
It’s an easy crock pot dish, so kick back and enjoy your family. Hopefully you have a little leftover pie as well!
Happy Thanksgiving everyone, much love to you all!! ~ Gena
Ingredients:
Serves 6
4 cups water
2 cups wild rice (I could only find a blend of wild, brown and red rice)
about 1 lb leftover cooked turkey, diced (approx. 2-3 cups)
1 t. ground sage
1 cup dried cranberries (or Craisins)
1 cup chicken broth
Optional Add-ins:
2 celery stalks, sliced
1 small onion, chopped
Suggested Side:
spinach with dried cranberries (Craisins)
Directions:
- Add water, rice, sage, cranberries and optional ingredients, if using, into a crock pot and cook on high for about 2 hours or low for 4 hours. (Crockpots vary)
- When rice is tender add turkey and stir until combined. Add some chicken broth if desired to break up rice a bit. Stir and cook another 15 min. or until turkey is heated.
- Serve with a salad with additional cranberries on top. Enjoy!!
