I kept seeing Sloppy Joe Cups on Pinterest and was anxious to try my own homemade version.
I made mine with ground turkey, red peppers and a yummy sauce. So good…and so easy! They were a hit!
You know how I like things from scratch, so I made my own sauce and baked them in easy, homemade biscuit dough, instead of using canned biscuits or buns. (Much healthier to cook from scratch and leave out all the processing and preservatives.)
If you prefer to use the canned biscuits, see below for the brand that is healthier, and maybe try the homemade kind next time! (It’s surprisingly easy!)

Ingredients:
- 1 T olive oil **
- 1 lb ground turkey breast
- 1/2 med onion, diced **
- 1 yellow, red or green pepper, diced **
- 1 cup ketchup (we like Simple Truth or Simply Heinz brands-less sugar than others)
- 1 cup water
- 1/2 T brown sugar
- 1/2 T chili powder **
- 1 t. dry mustard
- 1 t. sea salt **
- fresh ground pepper, to taste **
- 1 recipe homemade biscuit dough or 2 cans Immaculate Bakery crescent rolls (this brand doesn’t have hydrogenated oil- you can find it at Whole Foods or other natural grocery stores)
- 1 cup shredded cheddar cheese to sprinkle on top (optional) **

Directions:
- Preheat oven to 350 F. Line each cup of a 12 cup muffin pan with dough, pressing dough into the edges of pan.
- Heat olive oil over med. heat in a saucepan and brown turkey. Add onion and pepper and cook a few minutes or until veggies are soft.
- Add the rest of the ingredients and mix well. Let simmer for at least a few min. to let flavors incorporate.
- Fill dough cups with meat mixture and bake for 15-20 minutes or until light golden brown.
- Sprinkle with shredded cheddar cheese, if desired and serve.
