Mexican pizza…super easy yet something different. Enjoy it with Gena’s Favorite Margarita and get your Taco Tuesday started!!
Refried beans (and ground turkey or beef, if desired) sandwiched between two tortillas, topped with salsa, shredded cheese, avocados and tomatoes – delicious mexican flavors in an easy and fast pizza presentation.
For the super speedy version of this meal, skip the seasonings and meat and just use the beans. The salsa and toppings give it enough delicious flavor and it’s so fast! (this is the version I made in the above picture.)

Ingredients:
- 1 15-oz can refried beans
- 1 lb. ground beef or ground turkey (optional) **

1 medium onion, diced **

1 clove garlic, minced

1 tablespoon chili powder **

1/2 teaspoon paprika **

1 teaspoon salt **
-
8 tortillas Fresca
-
1 cup salsa
-
2 cups shredded cheddar cheese **
-
2 roma tomatoes, diced **
-
1/4 cup sliced black olives
-
1 avocado, sliced

Directions:
- Preheat oven to 350°F.
- Saute the onions in a med. sized skillet over medium heat until translucent. Add the garlic and cook for one more minute.
- Add meat, if using and cook until evenly browned. Drain off grease. Season the meat with chili powder, paprika and salt.
- While meat is browning, cook your tortillas (only if using tortillas fresca, otherwise skip this step.)
- Place 4 tortillas on a cookie sheet (may need to do this in two batches if your cookie sheet isn’t big enough.) Cover with a layer of refried beans. Then spread the seasoned meat over the beans and cover with a second tortilla.
- Spread salsa over the top tortillas. Top each pizza with shredded cheese, tomatoes, and olives.
- Bake until the cheese is melted, about 10 minutes. Remove from the oven and top with avocado. Slice each pizza into 4 wedges and serve.
