This is as yummy as it sounds…..with green chiles and pepper jack cheese, it is a delicious cousin of everyone’s favorite…mac ‘n cheese!
It’s fast and easy for your Taco Tuesday!

Ingredients:
- 12 oz. uncooked Penne or other pasta **
- 1 T olive oil **
- 1/2 onion, chopped **
- 1 jalapeno, finely diced (optional)
- 1 -4 oz can chopped green chiles
- 1 -14 oz can black beans, drained **
- 2 cups frozen whole kernel corn
- 1 cup half and half or cream **
- 1 large egg **
- 1 t. sea salt **
- 1/2 t. fresh ground black pepper **
- 2 cups shredded Pepper Jack,
Monterey Jack or Colby Jack cheese ** - 1 avocado, chopped
- fresh cilantro, finely chopped (optional)
- tortilla chip strips (or crushed tortillas)

Directions:
- Bring a large stock pot of salted water to a boil, over high heat.
- Reduce heat to med. high and cook noodles according to package directions. Drain.
- Meanwhile, heat olive oil in a large saute pan over med. heat. Add onions and jalepeno and cook until soft, about 3 minutes.
- In a glass measuring cup, whisk together egg, cream, salt and pepper. Set aside.
- Add green chiles, beans and corn to onion mixture and cook until heated through.
- Add pasta to bean mixture. Stir well and add in the cream mixture. Keep stirring over med. heat for another couple of minutes.
- Add cheese and mix well.
- Serve topped with avocados, chips and cilantro.
