Do you have leftover Easter ham that needs to get used up? Try Hammy Eggs! I have always loved “Popeye Eggs,” which my college roommate used to make for us…which is a piece of bread with a hole in it, where an egg gets fried in the center, baking itself into the bread. Thanks Tracy!! 🙂
This is a version of that idea. I cut a hole in the middle of a piece of ham, fried both sides in butter and then baked the egg right in the middle. Yum!!

Ingredients:
Makes one Hammy Egg
- one thick cut piece of ham
- one egg
- pinch of salt
- sprinkle of pepper
- 1 t. butter for pan
Directions:
- Melt butter in a large skillet over med. heat.
- Meanwhile, with ham on a cutting board, cut a circle out of the middle. Add ham and cook for about 1 min. or until just browned. Flip and add egg into the hole. Egg will spread out onto the ham.
- Sprinkle egg with a little salt and pepper and let cook until edges start to look dry, about 1 min. Loosen edges with spatula then flip. Cook for another minute or until desired doneness.
- Serve with toast or fruit.
