I have wonderful high school memories of sitting in a booth at Chili’s and spending time with my BFF’s. We used to freqent Chili’s….our favorite spot! My order was always Veggie Soft Tacos and a chocolate shake. The tacos were super simple, just a few veggies and a little ranch dressing! I’m changing it up a bit by adding Chipotle Cream Sauce on mine! Yum!!
I was craving these the other day so decided to see if I could remember what was on them…so here we go, to the best of my memory, Chili’s Veggie Soft Tacos. Thanks Lizzy and Beth for the memories!

Ingredients:
Serves 5-6
- 10 tortillas (I use Tortillas Fresca -uncooked tortillas with very few ingredients, they taste like homemade!)
- 8 oz sliced white mushrooms **
- 2 avocados, sliced
- 1 tomato, diced
- sprouts or micro-greens (I used spicy greens- a mix of radish,)
- 1 lime, quartered
- 2 cups shredded cheddar **
- 1 recipe Chipotle Cream Sauce
** Ingredients are used in other recipes from This Week’s Menu, starred to help in your planning. Types of cheese, frozen veggies and pasta may vary. 🙂
Directions:
- Cook tortillas, only if using an uncooked brand.
- To make tacos, fill tortillas with mushrooms, a few avocado slices, diced tomatoes and sprouts.
- Squeeze a little fresh lime juice over veggies.
- Sprinkle with cheddar cheese.
- Top with 1-2 T Chipotle Cream Sauce.
