Cinco de Mayo is right around the corner and I have the perfect, festive drink for your celebration…a Spicy Cucumber Margarita!
I have made these a few times now and they always get rave reviews! I just take my favorite margarita and add cucumber and jalapeño for a light, refreshing, beautiful festive cocktail. Perfect for Cinco de Mayo!

Spicy Cucumber Margarita
Ingredients:
Serves 2
- 10 oz. Simply Limeade (this brand has simple ingredients, just limes and sugar! Try to stay away from frozen limeade or juices that add corn syrup.)
- 3 oz. Tequila (we like Hornitos)
- 1 oz. Cointreau
- 1/2 med. sized cucumber
- 2-4 slices of a med. sized jalapeño
- chili powder and sea salt for rimming or Tajin seasoning
- Ice
Directions:
- For rimming glasses, add equal amounts chili powder and sea salt (or use Tajin seasoning, available at Amazon.com or Walmart) to a plate and stir to combine. On another plate, add a circle of honey or syrup (makes salt stick to glass without dripping down.) Swirl glass rims through honey, then dip into chili powder/salt mixture. Set aside.
- Add tequila, Simply Limeade, Cointreau, cucumber and 2-4 slices of jalapeño, depending on how spicy you want it (I recommend 4, but you may want to start with 2 and add more if desired) to a blender. Blend on low until cucumber is pureed as much as possible, about 30 seconds (little chunks is okay.)
- Strain through a fine mesh colander into a large measuring cup.
- Fill prepared glasses with ice.
- Pour strained margarita over ice.
- Garnish with a cucumber slice. Enjoy!
