Huevos Rancheros is a popular weekend breakfast for us but dinner sometimes as well. Eric likes his smothered in green chile and the rest of us leave off the heat.
It is super easy and quick to make. These are ingredients we always have on hand, which helps on a busy weekday night. Refried beans, cheese, green chile and eggs -simple and delicious! And the kids love it too! Anytime I announce that “breakfast is for dinner tonight” my kids are pretty happy!
My middle son claims this to be his favorite meal and often makes it for us. See the picture gallery below for a glimpse of the steps Scotty takes to make this yummy dish. Huevos Rancheros
Ingredients:
Serves 5
- 5 Tortillas Fresca
- 2- 15 oz cans refried beans (we like Rosarita Vegetarian -no lard)
- 2 cups shredded cheddar cheese
- 1 cup green chile (optional)
- 5 eggs or more, depending on individual preference (Eric likes two eggs on top)
- butter for cooking eggs
Directions:
- Preheat oven to 350 F.
- If using Tortillas Fresca, or another brand of uncooked tortillas, cook each over med. high heat for about 30 seconds per side or cooked through and no longer translucent (ignore this step if using regular tortillas.)
- Spread beans evenly over the tortillas. Place on a cookie sheet (may need to be done in batches. We have an extra large sheet so we can cook 5 at once.)
- Spread green chile on top of beans, if using, then smother with cheddar cheese.
- Bake for 5-10 minutes or until cheese is melted and edges of tortillas just start to get crispy and light brown. About two minutes before tortillas come out of oven, heat butter in a skillet over med. heat. Cook eggs to desired hardness (I recommend over easy!) As soon as eggs are done cooking serve with the egg on top of melted cheese/bean tortillas.
