This week we’re featuring Kids in the Kitchen. For tonight, Anna brings you Double Decker Tacos for your Taco Tuesday. It was a busy night so she had a little help from her friend, Haley, and big brother, Scotty. Sharing the kitchen is the best!
Do you remember Taco Bell’s Double Decker Tacos? Do they still have them? I always thought that was a brilliant idea!! We don’t eat at Taco Bell much these days, so my kids had never experienced the fabulous Double Decker Taco. (I know! My poor, deprived children!) Soooo…I thought it was the perfect Taco Tuesday meal and an easy Kids in the Kitchen choice. See below for the gallery of pictures!
Anna used ground turkey, homemade taco seasoning and all our favorite taco toppings for the yummiest Double Decker Tacos ever!! I just love the combination of soft tortilla with beans on the outside with the crunchy taco shell inside. Yum! They are super easy and fun to make! Anna served our tacos with spanish rice. Double Decker Tacos
Ingredients:
Serves 6-8
- 1 lb. ground turkey
- 1 recipe homemade taco seasoning (try it, so easy!)
- 1/4 cup of water
- 10 large taco shells
- 10 large flour tortillas (we use Tortillas Fresca -uncooked tortillas that have just a few ingredients, taste homemade and cook very quickly)
- 2 -15 0z cans refried beans (we like Rosarita vegetarian-they have no lard)
- 2 cups green chile- Eric likes the 505 brand. (optional)
- 2 cups cheddar cheese, shredded
- 1/2 head lettuce, chopped
- 2 ripe avocados, chopped
- 1 tomato, diced
- Cholula hot sauce (or your favorite!)
Suggested side (optional) :
Directions:
- Preheat the oven to 350° F.
- In a large skillet over med. heat, brown the turkey until cooked through, about 7 min.
- Add 1/4 cup water and taco seasonings. Stir well and cook for 2 more min. Remove from heat.
- Meanwhile, if using uncooked tortillas, cook for 3o seconds per side or until no longer translucent.
- Spread the beans evenly across the tortillas.
- Place a taco shell on its side on one half of each tortilla. Fold the other half over the taco so the beans stick to the shell, forming a double layer.
- Fill each taco with a thin layer of cooked turkey and place in a baking dish. Sprinkle with an even layer of cheddar cheese and bake for 10-15 min. or until cheese is melted and beans are hot.
- Add toppings and serve with spanish rice.
