This Mini-Weekly Menu starts easy with a slow cooker meal of Shredded Bbq Chicken Sandwiches. Simply add chicken and bbq sauce for some tasty sandwiches that couldn’t be easier. The recipe calls for more chicken than needed so your efforts will contribute to the next night’s meal, Bbq Chicken Quesadillas. Adding fresh mozzarella and thin sliced sautéed onions makes this simple piggy-backed meal taste gourmet!
