Do you ever feel like you JUST made dinner? And now it’s already the next night and you have to think of ANOTHER great idea? I absolutely love being in my kitchen and cooking but sometimes I run out of ideas. (Which happens to be why I started this blog!….I want to help others, as well as myself, think of ANOTHER idea for tonight!)
This Slow Cooker Shredded Bbq Chicken Sandwich may be one of the all time easiest dinners! The chicken was only in my crockpot for about 2 1/2 hours on high and it was ready to shred. Then, I simply served it on a bun with a small side salad….dinner!!
The best part? I made enough chicken to have leftovers for Bbq Chicken Quesadillas for tomorrow night! Ahhhhh….now we don’t have to think up what to have tomorrow! Yahooo!

Slow Cooker Shredded Bbq Chicken Sandwich
Ingredients:
Serves 4-5 (and makes enough leftover chicken for tomorrow’s Bbq Chicken Quesadillas)
- 6 boneless chicken breasts (about 3 lbs.)
- 1 bottle of your favorite bbq sauce (my fave is Sticky Paw, homemade by the Ball family!) or about 12 oz.
- 5 hamburger buns
Directions:
- Place chicken and bbq sauce into a slow cooker and turn to high for 2 1/2 hours or low for 5-6 hours. (Times may vary, my newer crock pot cooks much faster than my older one.)
- Using two forks, shred the chicken in the crock pot and let simmer in sauce until ready to serve.
- Serve on your favorite bun with a side salad, if desired.
- Save leftovers for tomorrow night’s Bbq Chicken Quesadillas.
