One Pot Veggie Pasta

One Pot Veggie Pasta

Hi everybody!! Long time no see!  Just made this last night and decided it needs to be re-shared…it’s the easiest and most delicious dinner ever.

On that note, if you need ideas for more simple, quick dinners click on the “Easy Dinners” category in the word cloud to the bottom right of my blog (if you’re on a cell phone, scroll down for that list of “Tags.”)

The blogging world is amazing!  There are so many talented people out there.  Take for example, Chungah from Damn Delicious.  She is a genius!!  Many recipes she posts get pinned on Pinterest….wait for it…..over ONE MILLION times!!  Pretty amazing!  (My record is around 6…ha!) Chungah has an amazing site and great ideas!  You definitely want to go check out all her wonderful recipes, like this one that I modified slightly.

One pot meals are all the rage these days.  They are easy to make and quick to clean up.  Brilliant!   This One Pot Veggie Pasta will be one of your new favorites.  It’s creamy, healthy and delicious!  I added a little more of the veggies and added them to the pot a couple minutes after the pasta began cooking, keeping them from getting overcooked.  Can’t wait to experiment with some more one-pot meals.

One Pot Veggie Pasta

Ingredients:
Serves 6

  • 1 lb. angel hair pasta **
  • 3 med. zucchini, chopped **
  • 12 oz. white mushrooms, chopped **
  • 1 cup frozen peas **
  • 4  1/2 cups water **
  • 1 t. sea salt **
  • 1/2 t. fresh ground pepper **
  • 1/2 cup cream
  • 4 sprigs fresh thyme, chopped (optional)
  • fresh grated Parmesan cheese for serving **

** Ingredients are used in other recipes from This Week’s Menu, starred to help in your planning.  Types of cheese, frozen veggies and pasta may vary. 🙂

Directions:

  • Add pasta and water to a large stockpot.
  • Bring to a boil over med. high heat, stirring occasionally to get noodles to settle down into the water.
  • Reduce heat to med. and let pasta cook for 2 min.
  • Add zucchini, mushrooms, peas, thyme, salt and pepper.  Continue to cook until pasta is al dente and veggies are tender, about 8-10 more min.
  • Add cream and stir well.
  • Serve with fresh grated Parmesan cheese.
