Slow Cooker White Chicken Chili

February 3, 2016 by eghassett

Slow Cooker White Chicken Chili

When I think of chili, I think of my dad’s classic recipe that I have loved my whole life.  It is very traditional, consisting of ground beef, tomatoes, beans and spices.  It is simple and perfect! I wanted to re-create my dad’s simple goodness in a white chicken chili.  So, I added plenty of beans for…

Snowflake Pancakes

snowflake pancakes

Happy Snow Day!!! Colorado got over a foot of snow and school is cancelled!  This calls for hot cocoa and Snowflake Pancakes!! I tend to get a little “themey” with my pancakes…candy canes during the holidays, red hot pancakes for Valentines Day, pumpkin in the fall, jack o’ lanterns on Halloween, and zoo animals when…

Sloppy Philly with Whiskey Peppercorn Sauce

Sloppy Philly with Whiskey Peppercorn Sauce

These AMAZING sandwiches were created while brainstorming by the hot tub at Crested Butte Ski Resort, with my brother-in-law and one of my all time favorite people, Rob.  That particular day of our wonderful ski vacation, the two of us were injured.  We were “pouting” by the pool with Bloody Mary’s and sunshine and embracing…

Quiche Cupcakes

Broccoli Quiche Cupcakes

I love quiche for dinner!  Eggs are a healthy protein and a variety of veggies can be used for the filling. The only challenge with a regular quiche is the cooking time.  That’s what makes these mini quiches so perfect…all the goodness with a much faster bake time. I use our favorite tortillas, Tortillas Fresca. …

Drunken Irish Beef Pot Pie with Riva Stout

March 16, 2015 by eghassett

Drunken Irish Beef Pie with Guinness

I just love how this pie got its name.  My husband took one look at my haphazard crust and asked, “Is that Drunken Irish Pie?” I assumed he was referring to the fact that I cooked the meat in Stout, in honor of St. Patrick’s Day.  Rather, he was poking fun at my not-so-perfect crust….

Creamy Tomato and Red Pepper Soup

Creamy Tomato and Red Pepper Soup

It’s a drizzly day here in Colorado…which makes for perfect soup weather! When I have red peppers I need to use, I usually make a roasted red pepper sweet potato soup that is out of this world! On this occasion I had no potatoes.  So, I came up with a creamy tomato, red pepper version….

Spinach Lasagna Rolls

Spinach Lasagna Rolls

This was super easy and delicious!  Adapted from skinnytaste.com.  Great idea! Traditional ingredients are rolled up inside lasagna noodles and topped with marinara, mozzarella and Parmesan. I like to pour a glass of Chianti or Sangiovese and sip while I’m cooking anything Italian.  🙂  Enjoy these yummy Spinach Lasagna Rolls! Happy Cooking! ~ Gena Ingredients:…

Sloppy Joe Cups

I kept seeing Sloppy Joe Cups on Pinterest and was anxious to try my own homemade version. I made mine with ground turkey, red peppers and a yummy sauce.  So good…and so easy!  They were a hit! You know how I like things from scratch, so I made my own sauce and baked them in…

French Onion Soup

Do you love ordering French Onion Soup at restaurants?  I do! Even when I plan on not having a large meal, if there’s French Onion Soup on the menu I just have to get it!  I love the flavors and, of course, the melty cheese that gets stuck on the side of the bowl. It’s…
