Mmmmmm….comfort food! This is my slightly healthier version. I make a homemade cream of chicken soup instead of the condensed type. Casseroles almost always call for condensed soup. Now we can have the comfort without the preservatives and unnecessary additives. For a gluten free version, try trading rice flour for the all purpose flour.
This is an easy, healthy, hearty dinner made with brown rice and broccoli. Even though this meal is meatless, the broccoli and brown rice come together to make a complete protein. Cheese adds a melty, rich goodness that brings all the flavors together. Happy Cooking! ~ Gena
Ingredients:
2 cups cooked brown rice
2-1/2 cups fresh broccoli florets
1 recipe homemade cream of chicken soup
1/3 cup milk
1 tsp salt
1 tsp paprika
1 1/2 cups shredded sharp cheddar cheese
Directions:
- Preheat oven to 350.
- Stir together all ingredients except the cheese.
- Pour into a buttered oven-safe baking dish. Sprinkle the top with cheese.
- Bake at 350 for 30-35 minutes until the broccoli is cooked through and the cheese is golden and bubbly on top. Serve hot!
