Oh, wow! My new fave!! I knew this would be healthy and good. But it was AMAZING!! The flavors and texture are so good!
This is a very easy and versatile recipe that I found from Jocooks.com.
You can cook it on a pizza round and add toppings for a heartier meal or just serve it with a side of steamed broccoli. I recommend dipping it in marinara….YUM!!
Look for the double asterisks (**) when planning your grocery list. These items will be used in 2 or more meals from This Week’s Menu. Hopefully this will save you a grocery trip! 🙂

- 1 large head cauliflower, cut into large pieces
- 4 eggs **
- 4 cups shredded mozzarella, divided **
- 3 t. dried oregano
- 1 t. sea salt **
- 1/2 t. pepper **
- marinara for dipping **
Suggested side:
- 1 small head broccoli, chopped and steamed **
Directions:
- Preheat oven to 425 F degrees. Prepare a large baking sheet with parchment paper.
- Add cauliflower pieces to your food processor and pulse until it is similiar to the texture of rice.
- Place the cauliflower in a microwavable bowl and cover with a paper towel. Microwave for 10 minutes.
- Meanwhile, in med. bowl, add the eggs, 2 cups of mozzarella, oregano, salt and pepper. Mix well.
- When cauliflower is done, let cool slightly then add to egg and cheese mixture. Stir until well combined.
- Place mixture onto baking sheet and form into a rectangular shape.
- Bake the crust for about 25 minutes or until golden.
- Add the remaining 2 cups of mozzarella cheese and put back in the oven for another 5 minutes or until cheese is melted and bubbly.
- Slice and serve with warm marinara.
