Need an easy and fast weeknight meal? You can never go wrong with grilled cheese! Make it your own by adding your favorite type of cheese and other ingredients that may appeal to you. I love this particular combo of avocados and bacon. Delish!
Goes wonderfully with my homemade Tomato Basil Bisque!
8 slices of artisan french bread (or your favorite bread,) sliced
1 ripe avocado, sliced
1-2 cups shredded cheese (I used mozzarella) or 4 slices of your favorite cheese
8 slices bacon, cooked
Butter one side of each slice of bread. Heat a griddle or saucepan on med. heat. Place four slices of bread in the pan, butter side down.
Sprinkle with an even layer of cheese. Top with avocado slices and bacon.
Meanwhile, place remaining bread slices in pan, buttered side down. Sprinkle with a light layer of cheese. When slightly melted, place on top of bacon and avocado-topped slices. The melted cheese on each side will help hold the sandwich together.
Cook until both sides are lightly browned. Serve with my homemade tomato bisque. Enjoy!!
