This is a super easy dinner with my favorite concept….using only ONE POT! Just use the leftover chili from last night’s menu or your favorite recipe, add a little water, tomato juice, pasta, seasonings and cheese….easy peasy!! It’s perfect for a busy fall evening and the kids love it too!
I was left with about 8 cups of chili from the evening before, but feel free to adjust this recipe according to how much chili you have from a previous meal.

One Pot Chili Mac and Cheese
Ingredients:
- 8 cups leftover Dad’s Chili (or your favorite chili recipe)
- 1 lb. noodles (I used spirals but macaroni or other shaped noodles work great also)
- 2 cups tomato juice
- 2 cups water
- 2 cups shredded cheddar cheese and more for sprinkling, if desired
- 1 t. sea salt
- 2 T chili powder (or to taste)
Directions:
- In a large soup pot, add all ingredients except the cheese. Stir to combine.
- Cover with a lid and bring to a low boil over med. heat.
- Continue cooking until noodles are tender, about 30 minutes, depending on which noodles you choose. Keep an eye on the amount of liquid in the pot. Some noodles absorb quicker. More water may be needed.
- Remove from heat and stir in cheese.
- Enjoy!!
